Illinois Products Expo features Copi fish demonstrations

Copi, the consumer food brand for invasive carp, will be showcased at the Illinois Products Expo taking place at the Illinois State Fairgrounds on March 1-2. Visitors to the expo can sample Copi tacos, chili, and poke bowls prepared by Maurice Jackson, an award-winning chef and partner at Bar19 in Chicago's Wrigleyville neighborhood.

The demonstrations featuring Copi dishes are scheduled for 11:30 a.m., 1:30 p.m., and 3:30 p.m. on Saturday, with additional sessions at 11:30 a.m. and 1:30 p.m. on Sunday. Tony Chavarria will be available to discuss opportunities for retail establishments or restaurants interested in offering Copi on their menus. Information about current purchasing options for consumers will also be provided.

The Illinois Department of Natural Resources (IDNR) has spearheaded efforts to rebrand invasive carp as "Copi" to address public misconceptions and boost consumer interest in this protein-rich fish. Launched in June 2022, the Copi brand has gained attention regionally, nationally, and internationally. Since its introduction, Illinois processors have reported a doubling of sales, with nationwide online sales now accessible.

Copi is described as a mild-tasting fish high in heart-healthy omega-3s and protein. Increased consumption is seen as beneficial for preventing these fish from disrupting other populations in the Great Lakes and aiding ecological balance restoration downstream.
