Copi, the consumer brand for invasive carp introduced by the Illinois Department of Natural Resources (IDNR) in 2022, will be highlighted at the National Restaurant Association Show in Chicago this weekend. This event is a key gathering for professionals in the restaurant and foodservice industry, showcasing trends and innovations.

Attendees can find Copi at Booth 11100, where AFusion Chicago and River Fish King will promote the product throughout the show at McCormick Place. Additionally, The Well Network will host an event on Monday, May 19, focusing on "Growing and Scaling Brands in Foodservice." During this reception, Chef Maurice Jackson from Bar19 in Wrigleyville will present a tasting menu featuring Copi dishes. These include Magic Copi Chili with tricolor tomatoes and tortilla strips, Copi Croquettes with avocado mousse and mango pico, and Copi Smash Joe Sliders with vegan mayo and barbecue sauce.

The IDNR has rebranded invasive carp as Copi to change public perceptions about the fish and boost consumer interest. The initiative aims to establish a new industry by promoting this nutritious protein source. Since its launch in June 2022, Copi has gained attention regionally and internationally. Illinois processors have reported increased sales, and online sales are available nationwide.
